Serves 4 people
Estimated Cooking Time: 1 hour
Ingredients:
- 1 lb ground turkey
- 1/2 cup breadcrumbs (can use GF)
- 1/2 cup crumbled feta (omit if dairy-free)
- 1/4 cup sundried tomatoes, roughly chopped
- 2 garlic cloves, minced
- 1 egg
- 1 tbsp dried minced onion
- 1 tbsp Dijon mustard
- 1 tbsp milk (can use lactose free)
- 1 tbsp fresh dill, chopped (or 1 tsp dried)
- 1 tbsp fresh parsley, chopped (or 1 tsp dried)
- 1/2 tsp kosher salt
- 1/4 tsp pepper

Instructions:
- Preheat oven to 375 degrees and spray a loaf pan with nonstick spray
- Put all the ingredients in a bowl and mix until combined
- Place the meatloaf mixture in the pan
- Bake for 45 minutes
- Let rest for 3 minutes after taking it out of the oven, slice into four pieces, and serve!

Back to reposting recipes after taking a bit of a hiatus. I’ll blame the typical excuses — life, work, time, all that! But all that aside, I had to post probably the most popular recipe from the original website: the Mediterranean turkey meatloaf! Y’all, this is a staple in our household! We have it at least monthly because it’s so easy to make and tastes amazing! I even made a version of this for my mom when she was visiting a few years ago, and she gave her stamp of approval, which is saying something if you know the cook my mom is. This recipe is inspired by a very similar Food Network dish, but I added some fresh herbs, some dijon, less salt, and it made it that much better!
When I say this was probably the most popular recipe from the website, I’m not lying. This is the recipe I get texts about from friends who say this has been a lifesaver in
food prep for the week and that they have gotten approvals from their skeptical significant others who aren’t big meatloaf fans to begin with. And granted, I only like normal meatloaf on occasion, but this one is so light and flavorful, and I never feel groggy after eating it. Another plus: you can even prep it a day before. Just mix it all up, place in the pan, cover with seran wrap and press it down so it’s touching the meat, and place in the fridge. EASY.
