Makes about 28 cookies
Estimated Cooking Time: 45 hour
Ingredients:
- Almond Sugar Cookie
- 2 1/2 cups of all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups sugar
- 1 cup (2 sticks) butter (I used salted), room temperature
- 1 egg
- 1 1/2 tsp almond extract
- Lemony Glaze
- 2 cups confectioners (powdered) sugar
- 4 tbsp water or milk
- 1/2 tsp vanilla extract
- Zest of 1 lemon

Instructions:
- Preheat oven to 375 degrees and line two cookie sheets with parchment paper
- Mix flour, baking powder and salt in a bowl and set aside
- Using a stand-mixer or a separate bowl and hand-mixer, mix the sugar, butter, egg, and almond extract until combined
- Add the dry ingredients to the wet ingredients and mix until combined.
- Using a cookie scoop (I used a 1.5″ scoop), scoop the dough out and roll each scoop into a ball and place on the cookie sheet.
- Using your palm, flatten the ball so it forms a thick circular cookie
- After you’ve flattened the last of your dough, place the cookie sheets in the oven and bake for 12-14 minutes. You want the edges to be set, but the tops to still be soft
- While the cookies are baking, make the lemon glaze by combining the powdered sugar, water or milk, vanilla extract, and lemon zest.
- Once the cookies are done baking, let them cool for at least 15 minutes.
- After the cookies have cooled, take each cookie and dip the top into the lemon glaze and set back on the cookie sheet. This is also where you can add toppings, such as edible flowers, if you choose!
- Wait about 10 minutes for the glaze to set, and enjoy!

Long story short, I had been thinking about an almond flavored cookie, but wanted to give it a spring vibe and have an excuse to use some pretty edible flowers. So this cookie is a standard, soft, sugar cookie, but instead of using vanilla extract, I used almond extract which gave it a nice almond flavor that wasn’t too overpowering.
They’re honestly the perfect consistency and you could eat them just by themselves. But why would you want to do that when we can just elevate it?! That’s where the lemony glaze comes in. It’s a quick addition, but man, it adds this light, citrusy flavor that just brings the cookie to a whole new level. It’s chewy, soft, and tastes like spring, so you’ll have to give it a try! I ordered some edible flowers from Amazon to add as a topping, but you honestly don’t need them unless you want your cookie to look a little extra festive! 🙂
